Tyler’s Ultimate Shrimp & Grits

Shrimp n Grits

Level: Easy, 4 servings

Ingredients:

  • 2 tablespoons extra-virgin olive oil ( I quasi-covered the bottom of the skillet with the EVOO)
  • 1 medium white onion, minced
  • 1 garlic clove, minced
  • 1 pound andouille or spicy Italian spicy sausage, cut in chunks
  • 1/4 cup all-purpose flour
  • 2 cups chicken stock

Cooked: From the Streets to the Stove, from Cocaine to Foie Gras

Cooked by Jeff HendersonI was touched by this story a year ago and while shopping on Amazon.com (my favorite online store hands down) I came across this book and decided it was time to officially become acquainted with the now, celebrity chef Jeff Henderson. In short, Jeff Henderson grew up in inner city San Diego and by the time he was 21, he was turning $35K a week selling and trafficking cocaine. Soon thereafter, he was sentenced to 20 years in prison. While in prison, he was a dishwasher and learned from some of the best cooks the prison had to offer.
